why can't you puree in a Vitamix?
watching hell's kitchen and I'm seeing them crucify a girl for putting a puree in a Vitamix...what happens when you puree in a Vitamix? can you use a food processor?

If it's a potato puree, a blender will tear the starch molecules and make the result pasty and gloopy.
track me
Probably this. Plenty of puree is perfect for a blender, it will ruin potatoes though
Too much power. Even a robot coupe would be too much power, gonna need a drum sieve.
so every puree okay in a blender and food processor but potato?
I'm not a fan of stand blenders in general. Vitamix is a particularly awkward one as it's shaped funny and hard to clean. Certainly not for high starch ingredients. Starchy foods include peas, corn, potatoes, beans, pasta, rice, and grains. You can use a food processor or a stick blender if you are careful about blade speed.
blade speed meaning blend on low?
Wonder if it’s something weird like “what if you needed to make someone a smoothie at the same time? Use the food processor instead.” Seems like a kinda weird thing to get pissed about
lol
