Almond butter not getting creamy

I make my own almond butter using the pro series 500. I typically do 3 cups of raw organic almonds and a tsp of salt. I never had any problems but recently I have not been able to get it to become creamy. I have tried adding a half cup if pecans but it still stays smooth but crumbly. I didn't use to have this problem. Could my motor be shot? My vitamix isn't that old.

i've read that you should roast your almonds beforehand and add a small amount of coconut oil if you want perfect consistency, although I've yet to try it myself.

It could just be the batch / crop of almonds is less fatty this time around. Add a little oil and see what happens!

I've not had good experience using our Vitamix to make nut butters. I use a food processor.

But you may want to add a small amount of neutral oil, like vegetable oil, or peanut oil to smooth it out.

Almonds have a relatively low fat content as far as nuts go. I second adding a bit of a neutral oil to your nut butter.

I recommend trying another batch of almonds to see if it's something about this particular batch. If it continues to not work, while using amounts that used to work for you, I recommend calling Vitamix. I'm pretty sure if you explain that something that used to work is no longer working, they will have you send in your machine and they will take a look at it.

I have never tried making almond butter from raw almonds. I've had good results with using roasted almonds.
