Heavy Duty Drywall Anchors?
So I'd love to install some wall shelves and acquire some furniture that the cats can walk across and on. Something that gives them more room to run around and climb in this tiny apartment. Only problem is that finding studs even with this fancy stud finder, is an annoyance and I know any shelf I get won't magically measure up to the studs in my apartment with their pre-existing brackets, so I'm coming here asking for advice on what type of anchors I can use in the drywall which may support the cat's weight. Void is a black Manx kitten, 4 months old, but I expect her to grow. Gremlin is a 2 year old Calico Chonk of a cat.

Toggles. I’d still recommend attaching to the studs though. You could run a continuous strip of blocking on the face of drywall stud to stud, paint to match the wall, and attach your shelves to that.
I did not think of that.
These are pretty much the only drywall anchor I use now. I use them for high traffic items like bathroom towel holders, shelves, curtain rods. The only downfall is the drill hole size to install them, but it’s worth it not having to redo.

You really should find a stud. YouTube different ways to find them, it’s usually not that difficult if you know they’re going to be 16” or 24” apart and all of your receptacles and light switches are attached to them.
But if you only want the anchor option, the best bet is Strap Toggles aka Snap Toggles.
The drywall will fail before the anchor does.
Try these
Simpson Strong-Tie FT18250C10 3/16"-24 FlipToggle Anchor with 2-1/2" Screw Bolt (10/Box)
Got them from Amazon. Apparently they support upto 188lbs, although i just have about 25lbs hanging from them.
