What tool do you use to purée?
I love gazpacho and my immersion blender sadly died today. What is everyone else using to really purée vegetables for things like gazpacho?
I’m happy to spend the money on a new appliance, especially if it can purée things like peppers for a smooth soup, I just want the best bang for my buck.

One of the things I miss about working in a commercial kitchen is I no longer have access to my beloved
Holy shit, you know your immersion blender means business when it's two handed and is marketed on its fkn horsepower.
It depends on the vegetable. I find that I get a smoother soup if I use a blender than if I use an immersion blender.
I normally use an immersion blender and then if I want it super smooth, I push it through a sieve. If everything is soft enough you could use a sieve without the blender. That's the traditional method from pre-blender days.
I just hate the idea of losing some fiber to a sieve but I should just get over that and try this. Thanks!
Vitamix! I made the smoothest, silkiest gazpacho with it.
Immersion blender. Although I’ve wanted a Vitamix for years. I should really just pull the trigger.
Generally, an immersion blender. The results depend on the food you're blending. When I've done potato-leek soup the leeks are fibrous enough (even without being a notably fibrous foods) that the soup is much smoother with a high-powered blender compared to an immersion.
Out of all of my kitchen tools, the one I replace the fastest is my immersion blender. On the third one now. Not very helpful for your soup, right now, but that’s my recommendation for next week
