This cabbage thing is served commonly at Izakaya in Japan. And it is usually just Japanese (kewpie mayo) and shichimi just like this restaurant. Maybe they may make their own mayo if you think it has a different taste from kewpie mayo? A lot of my readers do their own izakaya meal as you mentioned (they don’t live near izakaya like we do). Yes, I know the French dressing (Funny name isn’t it?). You can buy French Dressing at Japnese grocery stores. It’s just a vinaigrette with sugar in it. 4 Tbsp rice vinegar, 7 Tbsp vegetable oil, 2 tsp sugar (adjust as you like), and salt and pepper. Mustard optional. Whisk until it becomes white.
