Why do CR and NF have different subs?

New to the anime world. Was just watching Spy Family on Netflix. Downloaded the same episode's CR web-dl and noticed the subtitles were not exactly the same (Although they were both correct). So do these OTT platforms sub them? Are there no such "official" subs from the anime creators itself? What about the dubbed tracks? Will they vary from OTT to OTT as well? Personally I found the CR subtitles better.

Different companies usually make their own subtitles. Netflix subtitles have a reputation for being awful, but it depends on the show

They are separate companies, that's why the subs differ(?????)
Shows like Shield Hero and One Piece had the exact same subs on both Funimation and Crunchyroll.
So most of the time an anime only has one sub regardless of how many services it is on.
There are actually 4 official English simulcasts for Spy X Family, lol.

The subs are different because they have to do it themselves most times.
The anime creators license out the video and it's up to the streaming service to add them if they want to. That's why some anime have so many sub languages on CR compared to Netflix.
This can also be the case for dubs as well.
Each company has their own translator and depending on who it is, you either get an accurate translation or a localization. Your milage may vary on which version you prefer
