Moonlight/Sunshine is better for gaming, since video quality is miles ahead of anything else due to Nvidia's encoder. Input latency overall also seems better from my experience.
However, it does work a bit worse when on desktop due to mouse latency. On that aspect, Parsec works better and is also better for when you're not connected to the same network of your PC, as it's what it was designed for. Sunshine also works but requires some more effort to set up, and is overall less immediate.
That being said, I have had no issues with Sunshine like those you described (force restarts and all). So there might be some issue with your setup.

I use both. For remote desktop use I think Parsec indeed has the advantage in some aspect However, I've found Sunlight to handle moving images far better and is smoother on less-than-ldeal connection so the gaming experience is better.
What kind of protections does this provide? Letting someone have control over a pc I also use has significant security issues.

Parsec is easy, but requires accounts, you rely on them as SaaS provider. It also doesnt work on Linux desktops (for hosting)
Sunshine works fine for me. You can easily run it over a VPN which does the service discovery part for you.
