How much temperature is too much when making gummy’s.

I’ve been making gummy’s for a while now but I’m always wary of using more heat because I don’t want to destroy any thc. The problem is when I’m dosing it out in the molds it can become more solidified as it cools between the pan and mold. If I used more heat I could work with it longer but I don’t wanna damage so about how high can I take it?

Adding some vegetable glycerin or propylene glycol to your mix will definitely help with setting.

I bring the water to a boil at 140-160 degrees F.

Immediately remove from heat & stir vigorously.

Add in Knox gelatin 1-2 packets as it cools, stir jello(or similar) packet at 130 degrees

Once the mixture looks stirred and no longer like colored clumpy sugar, add in your already de-carbed oils/butter/wax & stir until completely dissolved.

I like to add a tiny amount(tip of a teaspoon) of coconut oil because it'll help bind the thc & help evenly spread the dosage. This is also what the Propylene glycol or vegetable glycerin is for.

At this point you should now have a ready to pour batch of edible gummies but you only have a few minutes till it becomes a solid.

In a larger pot, boil water till it reaches 200 degrees & remove from heat. Let cool to a max of 160 & min of 130 degrees F. this will help keep your mixture warm without burning your gummies.

You'll want enough water so that your mixing pot can be submerged inside this new hot water pot.

I use this method every time & always get consistent dosages & tasty gummies!

Any excess gummies you should leave in the freezer. They'll go bad right quick(1-1.5 weeks fridge life)!

you should try using a recipe that calls for a soft ball sugar/corn syrup mix that's added to bloomed gelatin. I've had them last for months in the fridge.

I like your procedure I'll be using that. Question, how many molds do you usually use? My mold isnt nearly enough for one batch and it solidifies so fast.

I think the answer you’re looking for is 180F. The gelatin will start to degrade above that temp and it will affect its ability to set properly. That is assuming you are using beef gelatin.

I try to keep my heat as low as possible. I’ve been using a sous vide recently at 140F and it’s great.

Not sure specifically with gummies (just asked a q myself), but when Im decarbing I like to stay under 300F to be safe. I know THC is activated around 350F so that should be much higher than what you work with to pour.

350F is pretty hot. A bit of coconut oil, 45-60 min & 210-250 degrees F is my preferred heat.
