It’s $5.95 (Canadian) for a 1 ounce bottle of the stuff and you literally use 1/8th of a teaspoon (or less) per batch of gummies.
Alternatively, any form of acid - citric, malic, tartaric, fumaric, and ascorbic - are all natural mold inhibitors and will greatly reduce the chances of your gummies going moldy.
(Use the acid IN the mixture, not just as a sour coating).
Can this be bulked with water to make it slightly easier to measure? 1/8 tsp is like 0.6ml.
Or maybe another way of asking is if you use too much, like a 1/4 tsp when you should use an 1/8, is it a problem?
Maybe that’s why some sour gummy’s are coated in the sugar and citric acid mix.
this video explains how to make it. It’s just water and potassium sorbate btw (1:3, 1 part potassium sorbate and 3 parts water). Once you make the solution, add in 1/8 - 1/4 tsp to your gummy recipe in the liquid stage

If your gummies are made right you dont need this at all.
My gummies have a 1yr+ shelf life.
Still no mold on the pack sitting in my cupboard...

Nice to know, but I have never had moldy gummies. Just keep them in tupperware in the fridge. 2-3 months no issues. Do people actually keep them long enough for mold to grow on them? Curious.
2nd batch I made I kept out of the fridge and somewhere between 14 and 20 days....mold. I noticed they were soft and ever so slightlysweaty each time I ate one.
